Quick and Easy Mango Chutney Chicken

Sometimes I wish for a magic genie to come rescue my kitchen woes. Unfortunately, magic genies don’t exist. Magic recipes, however, do exist. Magic recipes such as Mango Chutney Chicken.
I’m talking about a delicious meal using two ingredients and minimal effort. Are you still with me? You can pick up your jaw off the floor now. How is this possible? Using a package of chicken and a jar of Mango Tango Chutney by Zesteez. What you can expect? A sweet and savory lip-smacking mango chutney chicken.
Shruthi, the owner of Zesteez contacted me a couple of weeks ago and asked me if I would be interested in trying her chutneys. She’s a small business owner, and has developed her own line of home style chutneys. One, I love chutney. Two, I too, hope to be a small business owner soon. I had a feeling her chutneys were going to be good. And I was right. So, I guess you can say this post is a little personal for me. The chutneys are very flavorful and don’t taste like preservatives, which unfortunately, is what you taste with a lot of store-bought chutneys. The Mango Tango Chutney tastes exactly like the chutney I’d make at home. Not to mention, it’s got a cute name.
Shruthi sent me two jars of Mango Tango Chutney and Tomato Chunky Chutney. By the way, you can expect a recipe using the tomato chutney in the next couple of weeks. It’s delicious, I tell you. Delicious. For the Mango Tango Chutney, I wanted to create a simple recipe that highlighted the chutney, and not just used it as a condiment. Thus, Quick Mango Chutney Chicken was born. I used chicken thighs, because they contain more flavor and do not become rubbery like breasts. Feel free to use breasts, though. And seriously, all I did was brown the chicken, and then pour the chutney over the chicken and simmered until the chicken was ready. It’s that easy, folks. The chutney contains mangoes and peppers along with other spices that really add a great flavor to this dish. The sugar in the chutney will caramelize and form a nice crust on the chicken. It really is lovely.
- 2 lbs chicken, thighs or breasts, cut into chunks
- 1 jar Mango Tango Chutney
- ½ jar water, optional
- salt to taste
- 2 tbsp oil for sauteing
- In a pan, heat the oil on medium.
- Brown the chicken on both sides.
- Add the Mango Tango Chutney. For extra sauce, add a half jar of water.
- Cover and simmer for 25 minutes, or until done.
