Who else is wishing for fall? I know I am. I am so tired of these record breaking temperatures. You know what helps me beat the heat? Easy frozen yogurt bark. One of the easiest things to put together for a rich yet healthy snack is this Easy Frozen Yogurt Bark with Blueberries and Walnuts. I absolutely love blueberries, and when they’re combined with rich and creamy Greek yogurt along with toasted walnuts to give a little crunch, it makes for a really special treat any time of year.
Seriously, though. This is the easiest snack to put together. You’re going to love it, especially if you’re a big fan of frozen treats. The texture is creamy with just a touch of iciness. It melts in your mouth. I’ve used blueberries, because I love blueberries, but you can use your favorite fruit, or whatever’s in season. California walnuts are a delicious and versatile ingredient that adds flavor, crunch and depth to the frozen yogurt bark. You can toast them beforehand, if you like. That will only increase the nuttiness of the walnut. However, they’re just as delicious without toasting them first.
I love to keep healthy snacks on hand whenever I get cravings, and the easy frozen yogurt bark is a winner. Every ingredient in this bark is healthy and good for you. You’ve got protein from the Greek yogurt, vitamins from the blueberries, and Omega-3 from the walnuts. Did you know that walnuts are the only nut to provide a significant source of the Omega-3? - 32 oz Honey Vanilla Greek Yogurt, full fat
- 1 cup blueberries
- ½ cup walnuts, broken into pieces
- Line a baking sheet with parchment. Pour the yogurt on the cookie sheet and spread evenly. Sprinkle with blueberries and walnuts.
- Freeze for at least 3 hours. Break into pieces.
- Store in an airtight container in the freezer.
