Don’t get bored with Indian leftovers. Use those leftovers to create a Chicken Tikka Masala Burrito
Have you ever had leftovers that seem to last for days? I certainly have. I don’t know about you, but even after the first leftover meal, I get bored. That becomes a problem when there’s several days worth of leftovers. And that tends to happen to me whenever I make Indian food. I always make a huge batch because I love Indian food so much, and in my head I think I’d be happy to eat the same meal over and over again. Yeah, that doesn’t work. Hindsight is 20/20, though, right? Sure.
Luckily, I tend to be somewhat creative, so finding ways to get the most out of my leftovers isn’t a big deal. Chicken tikka masala is one of our favorite meals, and leftovers are even better when transformed into a chicken tikka masala burrito. It’s super simple to make, super delicious, and a great way to use up leftover rice and chicken tikka masala. Wrap it up and it makes a great meal on the go or to pack for lunch.
I’ve talked about my love for Zesteez chutney before on the blog, and I’ve made a few recipes using different types of chutney, such as this mango chutney chicken and Indian veggie pizza , so I think I am super excited to introduce to you a new way to use Zesteez’s Mint Cilantro Chutney. As I’ve said before in previous posts, these chutneys have an excellent homemade flavor and the freshness and tangyness (is that a word?) of the mint cilantro chutney works really well in this chicken tikka masala burrito. All you need to do is slice up a bit of onion, heat up a tortilla, and add in the leftover chicken and rice, pile it all together and you’re good to go!
I really like fusion food, and I try to mix food culture as much as I can. You can go all out and add beans and cheese to give it a heavy Indo-Mexican fusion, or you can keep it simple like I did. Either way, I highly suggest playing with leftovers and making this chicken tikka masala burrito. Your belly will thank you.
- Zesteez Mint Cilantro Chutney
- ⅛ White Onion, sliced
- 1 Flour Tortilla
- Leftover Chicken Tikka Masala
- Leftover Rice
- Beans, optional
- Cheese, optional
- Heat the tortilla
- Spread Zesteez Mint Cilantro Chutney over tortilla
- Layer with leftover chicken tikka masala and rice
- Add onions and optional stuffings
- Roll and eat
